The Hut

Established in 2013, The Hut has grown from a small, rustic beach bar known only to the locals into one of the UK’s most iconic restaurants, offering an unrivalled passion for simple yet delicious food, and a buzzing atmosphere that delivers an unforgettable experience.

Positioned in the centre of Colwell Bay on The Isle of Wight, protected from the wind and drenched in sunshine from noon until night, The Hut is a place for those wanting to eat well, drink well and have fun by the sea.

 
 

Why MarketMan?

Steve Lewis, Operations Director, selected MarketMan to replace their old inventory management system last year, as they needed something a little more intuitive than what they were previously using.

The idea was to find a system that could give the leadership team an accurate day-to-day snapshot of what was going on in their restaurant, giving access to far more detail and information, that would be the foundation to boosting profits for the business!

With MarketMan installed in their central processing kitchen and the main restaurant, initially the team were using the platform ‘pretty well’...


“We had built out our recipes quite well, and were comfortable using the system for ordering our goods, although perhaps at that early stage we hadn’t appreciated the importance of receiving orders and managing that process through the system as well…”


The Challenges Faced

There were however a few recurring issues starting to arise, which was impacting the team’s ability to get the most out of the platform.

Small issues with things like their POS integration and the correct data being pulled through to MM…sub-recipes causing some headaches for their chefs…and a slight knowledge gap around how MarketMan can interact with their accounting platform…

However it was very clear that one of their biggest challenges to getting the most out of MarketMan was just not being able to commit enough time to the system itself, and Steve could see more and more problems coming from the lack of accurate data being fed into the platform.


“There ended up being quite a lot that we weren’t doing right, so there was a risk of an information overload if we wanted to fix things. Yannis did a great job of doing a lot of the background leg work for us…”


 

Some Key Outcomes

Following the in-depth training, weekly meetings between Twice Baked and The Hut team were agreed to ensure the correct processes were being followed across waste events, receiving orders, recipe building and stock taking.


“We’ve now got a very good process around a weekly Top 10 count, varied month by month depending on where we might be seeing problems, which has resulted in much more accurate and reliable month and quarter end reporting and a massive reduction in variance across the board”


Now with a fully trained team, an in-house MarketMan SME and accurate data readily available, Steve is looking forward to seeing the best that MarketMan has to offer...applying what they now know to future supplier negotiations and growing the business as a whole.

  • Actual costs and Theoretical costs accuracy down to an average variance of 0.5% instead of 5%

  • Wastage dropped from 2.5% to under 1%, as per the businesses target
